A woman in Muskogee is turning her dream into a business, now selling her original artisan breads, preserves, and treats to the public.
Heather Scott, a certified holistic nutritionist, has more than 30 years of experience in baking and cooking. She even made professional recipe development a career emphasis.
Until 2023, Heather had not considered making her hobby baking into a full-fledged micro-bakery business. Once the preserves & treats she began bringing to friends resulted in them ordering larger quantities as gifts for the holidays, she realized this was a talent that needed to reach even more friends and customers.
“I always knew my recipe adaptation skills were important from a foundation of making quality food accessible for people with food sensitivities and allergies, but I never realized this could blossom into what it has become today. I have all my friends and family to thank for encouraging me to get to this point.”
Heather is customizing gluten-free, dairy-free, and egg-free recipes for clients on a regular basis, and she has the know-how to make adaptations to suit a number of other dietary needs.
What is a “Popover” Bakery?
“It is simply my playfully personalized name for a home-based or cottage-scale bakery pop-up. I’m surprised nobody else has come up with that before, since it is a reference to a delicious, well-known breakfast food.”
Heather says she strives to always rely upon seasonal produce, organic ingredients, and supporting local business as often as possible. When asked if she thinks there are already enough sourdough and cottage bakery stands in the local markets, she said, “I believe there is room for everyone to share their skills and creations without stepping on each others’ toes. Everyone needs to eat, and most people love to try new things. What I offer is unlike anything anyone else can replicate, and I believe that kind of individuality is a gift that every baker- home or professional alike- has in common.”
“I’m constantly going to other market sellers and supporting their businesses. I know first-hand how hard they work, and I believe that the act of cheering on and supporting others in their personal endeavors is a testament of goodwill that will always circulate back to me and so on.”
